Summer Cucumber Salad
Happy Wednesday! We're beginning today's blog out in the garden with Lisa for another cooking segment- cucumber edition. Her cucumbers are growing so well this year, so she has lots and lots she needs to use soon. Luckily, she’s having guests over for dinner, which gives her the perfect chance to harvest them for a summery cucumber salad. Lisa also grabs a handful of fresh dill before she heads inside to the kitchen.
Lisa is wearing our newest Cashmere Collection. She layers the Astro Tennis bracelet and Mayzel bracelet. The warm cappuccino tones, blue and green crystals pair perfectly with her cool & warm toned blouse and jeans.
Now that we're in the kitchen, Lisa lays out all of her ingredients. Starting with the cucumbers, she likes to partially peel the skin to leave strips of dark green. This first step isn't necessary, but it makes the cucumber edges look more fun when plated. Then, slice them into medallions.
Next, she makes the dressing for the salad. The amount you'll use of each ingredient depends on how many cucumbers you have.
To a blender, add:
- A few scoops of cream cheese
- Sour cream
- Fresh dill to taste
- Crushed garlic to taste
- White onion to taste
Then, blend until smooth!
Add water one teaspoon at a time until it reaches a thinner, dressing like consistency
Last, Add salt & pepper to taste, then mix with cucumber slices and garnish with fresh dill.
