Blackberry Jelly
Happy Wednesday! Our founder and head designer, Lisa, has been busy harvesting her summer fruits from the orchard, and today she’s sharing another recipe with us. After gathering almost 7 pounds of blackberries, she decided to make a simple jelly out of them.
Here’s how it done:
- Gather your ingredients- berries, pectin, sweetener of your choice, and water.
- Place your berries in a large stock pot. Cover them with 1 ½ cups of water. Bring the pot to a boil, then reduce the heat to low, cover the pot and simmer for 10 minutes.
- Add your pectin- Pectin is a naturally occurring fiber found in fruits, and helps to thicken jelly to a spreadable consistency. Next, stir in your honey and stevia. You can also use sugar, but this is a lower sugar alternative. Return to boil for another minute, stirring constantly.
- Strain juice from the mixture using a sieve. (You can also use a colander with several layers of cheese cloth) Give the mixture plenty of time to drain.
- After the fruit has drained and the juice has cooled, pour the juice into sterilized, hot canning jars. Next, place the jars into a hot water bath to can them for longer storage.
