Making Watermelon Salad with Lily
Hi Sorrelli friends, Lily here! Those that know me know that summer is my FAVE season. It’s my birthday season (Gemini!), it’s the time when the garden is in full bloom, and it’s the best season for the freshest fruits and veggies. I have been following content creator Nicole Modic, who goes by the name Kale Junkie, on instagram forever. I recently bought her cookbook, Love to Eat (which, fun fact, was published by a dear friend of mine, shoutout to Anna!).This summer, I have been making this Kale Junkie Watermelon Salad on repeat. I’ve served it to friends, then forgot, and raved about this salad that they “HAVE TO TRY”, only to be told that I literally served it to them the prior weekend.
For real guys, it’s worth the hype. I would have never put OLIVE OIL on a watermelon salad. Nor would i have mixed basil and salt (savory) with watermelon (sweet). But something about the combination is unexpected and just freaking fabulous. You must try it!

In celebration of National Watermelon Day, I'm sharing my delicious spin on this tasty summer salad.
RECIPE
Ingredients:
- 6 cups watermelon, cubed as shown
- 3/4 cup pine nuts, toasted
- 1 cup greek feta, crumbled (always buy a block and crumble by hand for best flavor!)
- Handful fresh basil, chopped or torn by hand
- 1 Avocado, diced
- 3 tb extra virgin olive oil
- Flaky salt
Directions:
- Cut and cube the watermelon and set aside.
- Add pine nuts to a pan over medium heat and toast them for about 4-5 minutes, until fragrant. Watch carefully so they don’t burn.
- Crumble the feta and chop the basil.
- Peel & diced avocado. Now assemble
- On a large plate/serving dish, add the watermelon, followed by the feta, pine nuts, and basil.
- Drizzle with olive oil, and hit it with flaky salt. ENJOY!

In other exciting news, I grew watermelon from seed this year and we have a proper patch going in the backyard! I counted 5 little baby watermelons yesterday! Can’t wait to use these babies in this salad in just a few weeks when they are ready to be harvested!
